i am especially interesting in working Mexico, Central America, or South America.

Most multi-national companies (MNCs) would be likely. Like General Electric, Proctor&Gamble, etc. Big large cap companies.
Well many of the bigger corporations have overseas operations so you should look into those. A lot of fastfood companies, beer companies, car companies, gas companies.
